Valenti's L'Innesto Organic White Wine from Nerello Mascalese

White from black grapes, L'Innesto by Valenti wineries is an organic wine produced in Passopisciaro according to the principles of sustainable viticulture. A Nerello Mascalese vinified in white, rich in freshness, minerality, aroma and elegance.

Altitude: from 600 to 800 m above sea level

Exposure: Northern side of Etna

Soil: volcanic

Training system: espalier and alberello

Density of vines per ha: from 4600 to 9000 plants

Harvest: manual in mid-October

Vinification: as soon as it arrives in the cellar, the grapes are destemmed and left to macerate at a low temperature in contact with the skins, to favor aromatic extraction. The must clarification phase follows

Fermentation: in steel tanks at a controlled temperature of 14-16°C

Aging: in steel tanks for 2-3 months

Alcohol content: 13% vol

Color: very light straw yellow

Nose: complex and varied bouquet. On the nose it presents floral notes of roses and white flowers and fruity hints of citrus fruits, strawberries and under-ripe peaches

Palate: mineral, fine, with a long and fresh finish

Pairings: goes well with vegetables, fish dishes, sushi and raw fish tartare. Excellent white wine as an aperitif

Serving temperature: 10-12°C
