Puritani Etna Rosso DOC Valenti cellars

The very ancient pre-phylloxera vineyards, the extraordinary lava terroir of the Guardiola district in Passopisciaro, and Valenti's careful and sustainable viticulture make Puritani an excellent red wine emblematic of the Etna DOC denomination. Body, structure and character distinguish this complex Nerello Mascalese. Its extreme finesse makes it pleasantly drinkable.

Production Area: Guardiola district, Castiglione di Sicilia (CT)

Altitude: from 600 to 800 m above sea level

Exposure: Northern side of Etna

Soil: lava, rich in minerals

Average age of the vineyard: old vines that are even over a century old

Training system: espalier and alberello

Density of vines per ha: from 4600 to 9000 plants

Harvest: grapes harvested manually at the end of October

Vinification: in steel tanks, using only indigenous yeasts present on the skins. Maceration lasts 14 days

Fermentation: at a controlled temperature of 24-26°C. In this phase, "pumping over" is often performed to wet the cap made up of the skins so that they release colour, polyphenols, tannins and aromas

Malolactic fermentation: once the alcoholic fermentation is finished, the malolactic fermentation takes place in large wooden barrels of 10, 25 and 50 hl

Aging: in wooden barrels for approximately 18-20 months

Bottle refinement: 12 months before being marketed

Alcohol content: 13% vol

Color: ruby red

Nose: fragrant, broad and fruity bouquet with aromas of cherry and berries. Floral and species scents are also perceived

Palate: extremely elegant, warm and structured. Pleasant to drink thanks to a notable acidity. The finish is fresh and persistent with returns of tannin

Pairings: perfect with succulent meat dishes, lasagne with meat sauce, game, roasts and mature cheeses

Serving temperature: 16-18°C

Longevity: full-bodied and structured wine capable of aging for many years
