Valenti Norma Etna Rosso DOC from Passopisciaro

Complexity, refinement, freshness and tannicity characterize Valenti's Norma wine. A Nerello Mascalese of great character, emblematic of the uniqueness of Passopisciaro wines and of a rich volcanic territory suited to viticulture. The Etna rosso Norma is an expression not only of the natural vocation of the territory, but above all of the commitment and work of the Valenti family who, with passion and in a sustainable way, produce unrepeatable Sicilian wines.

Grape Variety: Nerello Mascalese with a very small percentage of Nerello Cappuccio

Production Area: Contrada Bonanno in the municipality of Castiglione di Sicilia

Altitude: from 600 to 800 m above sea level.

Exposure: North - North East side of Etna

Terrain: soft and fertile of lava nature

Training system: espalier and sapling

Density of vines per ha: from 4600 to 9000 plants

Harvest: manual at the end of October

Vinification: in steel tanks, using only indigenous yeasts present on the skins. Maceration lasts approximately 10 days

Fermentation: at a controlled temperature of 24-26°C. During the fermentation phase, "pumping over" is often performed to wet the cap made up of the skins so that they release color and noble substances, polyphenols and aromas

Malolactic fermentation: carried out in barrique

Ageing: 8-9 months in barrique

Bottle refinement: at least 12 months before being marketed

Alcohol content: 13% vol

Color: ruby red typical of Etna DOC wines

Nose: complex and fruity with aromas of cherry and berries

Palate: very refined and persistent. The finish is long and fresh, with returns of tannin

Pairings: red meats, game, mature cheeses

Serving temperature: 16-18°C
