Valenti's Etna white DOC Enrico IV Contrada Santo Spirito 

Enrico IV Contrada Santo Spirito is one of Valenti's crus produced on the northern side of Etna in the district of the same name. Pure Carricante, Enrico IV Contrada Santo Spirito is a district wine obtained from grapes grown on the rich black soils formed over the millennia with the lava flows of Etna. The richness of the soil, the refinement of the vine and the refinement in barrique make this white Etna an unforgettable wine.

Production area: Santo Spirito district, Castiglione di Sicilia (CT)

Altitude: from 600 to 800 m above sea level

Exposure: Northern side of Etna

Terrain: black earth rich in minerals and volcanic sand, formed following the eruptions of Etna

Training system: espalier and alberello

Density of vines per ha: from 4600 to 9000 plants

Harvest: grapes harvested manually in mid-October

Vinification: as soon as they arrive in the cellar, the grapes are destemmed and left to macerate at low temperature for 24 hours, in contact with the skins, to encourage aromatic extraction. The must clarification phase follows

Fermentation: in steel tanks at a controlled temperature of 14-16°C

Aging: up to 12 months in barrique in contact with fermentation yeasts. This promotes the release of all the most precious substances, such as polysaccharides and mannoproteins

Bottle refinement: 3 months before being marketed

Alcohol content: 13.5% vol

Color: straw yellow

Nose: intense and complex. The bouquet is characterized by fresh notes of mint, spicy hints and fruity aromas of citrus and tropical fruit

Palate: great elegance and flavor

Pairings: perfect with fish first and second courses, white meats and semi-mature cheeses

Serving temperature: 10-12°C

Longevity: 5-10 years
