Slow Food Presidium, Sicilian Black Bee Eucalyptus Honey is a summer honey with balsamic and disinfectant properties. It is widely used to treat coughs, colds and laryngeal pharyngeal infections. It is a sweetly aromatic and balsamic honey. Eucalyptus honey can have a strong woody aftertaste but this version has a beautifully rounded mellow flavour with a subtle complex finish.
Dark amber when warm and sets to a thick fine crystalline structure when cold.

Sicilian Black Bee Eucalyptus Honey is renowned for its balsamic properties.

The first and most important producer of Sicilian Black Bee honey is Carlo Amodeo, promoter of the recognition of Sicilian Black Bee honey as a Slow Food Presidium. His company is located at the foot of the park of Mount San Calogero in Termini Imerese. Here the honey extraction takes place but the apiaries are located throughout Sicily and this allows the production of fine single-flower honeys. Amodeo's production technique consists in taking honey from the hives every week to avoid oxidation of the honey due to the high temperatures of the hive (35°C). It is cold extracted and after decanting it is placed in jars and placed in a cold room at 5°C, thus preserving all its properties.

Crystallization: fine-grained and compact consistency

Smell: intense, strong, characteristic, pungent, intense of the eucalyptus flowers

Taste: strong, similar to the smell, but more pleasant, reminiscent of licorice toffee

Use: balsamic honey, known and appreciated for its disinfectant and beneficial properties for the laryngeal-pharyngeal tract
