Vinification: the grapes, harvested by hand after a careful selection of healthy and perfectly ripe berries, are left to dry in the sun on traditional cannizzi (grates) for about 15-20 days, without adding yeasts
Refinement: partly in steel and partly in oak for 6 months. It then rests 6 months in the bottle
Alcohol content: 13% vol
Color: amber with golden reflections, bright and crystalline
Nose: bouquet full of fruity hints of dates, dried apricots, figs, sultanas, notes of vanilla and notes of Mediterranean scrub, eucalyptus, privet and lemon balm
Palate: balanced, powerful, fresh, elegant. The finish is long with a hint of sapidity
Serving temperature: 14-16°C
Pairings: fior di mandorla, marzipan, desserts with dried fruit, orange cake, spicy soft cheeses and goose foie gras
