GRAPE VARIETIES: Nero d'Avola (50%), Cabernet Sauvignon (30%), Merlot (20%).

SOIL: Calcareous and clayey.
CLIMATE: Dry and windy spring and summer, with medium rainfall in winter.
CULTIVATION: Training system: trellis

Density of plantation: 4.600 vines per hectare.
YIELD PER HECTARE 45-50 hl.
HARVEST: Strictly manual; it takes place in September.
VINIFICATION: Maceration takes place in small stainless steel tanks at a controlled temperature of 28-30°C for 14/16 days. Malolactic fermentation is completed.
BACK AGEING: 12 months in small French oak barrels, 4 months in cement vats and 6 months in bottle. Ageing wineries are at controlled and steady temperature (16° C).
FOOD MATCHES: The wine matches perfectly with roasted meats, stew, game, mushrooms and seasoned cheeses.
ALCOHOLIC CONTENT: 13,5 % vol.
