Calderara Sottana is a single vineyard wine produced only from vineyards between 50-100 years old. Of all our single vineyard wines it is perhaps the most complete: much like a wide angle lens encompasses the most ample panorama, so Calderara seems to contain and display the widest spectrum of flavors, bouquets, nuances.

Grapes: 98% Nerello mascalese, 2% Nerello cap
Vineyard area: 15 ha

Terrain: volcanic, extremely stony, shallow, very rich in skeleton
Exposure: north side of Etna at 600-650 meters above sea level
Average age of the vines: from 50 to 100 years
Training system: traditional Etna tree converted to espalier
Harvest period: first ten days of October
Vinification: alcoholic fermentation at a controlled temperature (28-30 ° C)
Aging: spontaneous malolactic fermentation and maturation in French oak barriques, tonneaux and large casks (10-30 hl) (20% new wood). Bottling after 16-18 months of aging in wood and 1 month of aging in steel
Color: pale ruby with mahogany reflections
Bouquet: intense, with notes of ripe fruit and spices
Taste: structured and full, with present but soft tannins
Pairings: meats, aged cheeses
