Don Pietro Bianco Bio 2023 Dei Principi di Spadafora

Don Pietro Bianco Dei Principi di Spadafora takes its name from the founder of the Spadafora farm, Don Pietro, father of the current owner Francesco Spadafora. Don Pietro Bianco is a fresh and well-balanced wine, a blend of native Sicilian grapes Grillo and Catarratto. The uniqueness of the terroir of Contrada Virzì in Monreale, the expert work of the winemakers, the respect for the environment and the rigorous attention to the principles of the organic regime, from the vineyard to the bottling, contribute to the extraordinary quality of this Sicilian wine.

Harvest: manual between August and September

Vinification: the grapes, freshly picked, arrive in the cellar where they are destemmed, using a rotary eccentric screw volumetric pump. The grapes are dropped through a heat exchanger, which further lowers the temperature by another 10-15°C, and part of them arrive in a tank for the creation of the pié de cuvé and the remaining part in a soft press. The must obtained is immediately cooled, thus determining spontaneous decantation. After about three days, the clear part is transferred into cement tanks where the controlled fermentation generated by the fermenting must, son of the pied de cuve, begins
