Production area: Guardiola district, municipality of Castiglione di Sicilia (Catania)
Grapes: 98% Nerello mascalese, 2% Nerello cap
Vineyard area: 1.5 ha
Yield per hectare: 3.5-4.5 tons / ha
Soil: volcanic, mixed of sand, pumice and volcanic ash, with a fair presence of skeleton
Exposure: north side of Etna at 850-900 meters above sea level
Average age of the vines: from 50 to 70 years
Breeding: traditional Etna tree with single stake
Harvest period: second decade of October
Vinification: alcoholic fermentation at a controlled temperature (28-30 ° C)
