What are the characteristics of the Sul Vulcano Etna Bianco Doc Donnafugata wine?

A completely Sicilian jewel composed of Carricante grapes that grows on the slopes of Etna, between Randazzo and Castiglione di Sicilia. The grapes are selected and harvested by hand afterwards. The aging takes place partly in steel and partly in used French oak barriques for 10 months. It ends with a period of at least 7 months in the bottle.

VARIETIES: Carricante and small percentages of other grapes

PRODUCTION AREA: Eastern Sicily - Northern side of Etna

VINIFICATION: Fermentation in steel at a temperature of 14-16°C

AGING: Partially in tanks and partially in French oak (second and third passage barriques) for 10 months and then at least 7 months in the bottle

ALCOHOL CONTENT: 12.22%

SERVING TEMPERATURE: 10-12°C

PAIRING: Fresh fish, such as shellfish. First courses with vegetables and porcini mushrooms

COLOR: Straw yellow with golden reflections

TASTE: Enveloping, fresh, savory and persistent. Hints of citrus fruits and Mediterranean herbs
