"Il Feudo" ExtraVirgin olive oil is an organic oil obtained from olive groves that are located at an average altitude of 400-500 m.l.s.
Among the varieties of olives used, Leccino, San Benedetto, Verdella, Nocellara Messinese, the Minuta prevails, an autochthonous variety with a medium-small fruit and a raven black color when ripe, cultivated mainly in the north-eastern area of the Nebrodi, in the municipality of Naso and in the neighboring ones of Castell'Umberto, Ficarra and Sinagra. La Minuta makes the oil so precious that it has been classified as a Slow Food presidium.
The harvest of the olives takes place manually with mechanical facilitators and runs from October to November, when they reach the right maturity (veraison).
Within a few hours of collection, the milling takes place which consists in the cold extraction of the oil through a continuous cycle system that uses the Superdecanter X15 of the Tuscan Mechanical Workshops. Thanks to this latest generation decanter, the oil is free of impurities, preserves its organoleptic characteristics, since it does not undergo a further passage in the final separator, and has a very low acidity (0.2% of oleic acid). In addition, the oil obtained is rich in orthiphenols and Vitamina E.
Green in color with golden highlights, it has an intense and persistent fruity aroma with hints of leaves, unripe tomato and apple.
It has a pleasant taste given by the right balance of bitter and spicy, with notes of shelled almond, aroma of freshly cut wild herbs, apple and tomato.
The extra virgin olive oil "Il Feudo" is an excellent seasoning, raw, for meat, fish and salad dishes.
