Harvest: Manual harvesting: beginning-mid september

Production Technique: Red wine vinification with destemming and light cold maceration in cement vats, subsequent alcoholic fermentation with frequent punchings and variable temperature from 22 to 28 °C, at least 1 délestage per day, dwell time on the skins for another 15 days after fermentation.

Ageing: Natural malolactic fermentation in steel tanks with a light break on fine lees for 6-8 months.

Alc.% Vol.: 13°

Matches indicated for wild game dishes and main courses with grilled veal.

Serving temperature: 16 - 18 °.
