Obtained from Grillo and Catarratto grapes, Oltre Cento is a Marsala Superiore Dolce, the last born of the Florio marsala. Maturation in oak barrels for at least 24 months is one of the secrets of its quality.

VARIETY: Grillo and Cataratto white berried grapes
TYPE: Fortified Wine
TERRITORY OF ORIGIN: Coastal strip of the municipality of Marsala and inland of the province of Trapani
SOIL: Red sandy soils, dry, rich in sand and characterized by little fertility
ALTITUDE: Vineyards cultivated from sea level up to 300 meters
VINEYARDS: Typically bred with a Marsala sapling with a density of at least 5,000 vines per hectare
CLIMATE: Insular with mild winters and very hot and dry summers
HARVEST: Manual, advanced ripening after the second ten days of September
VINIFICATION: Pressing of grapes with a high sugar content to pass the precious substances contained in the skins to the must. Fermentation at controlled temperature and preparation of the tanning with the addition, to the wine obtained, of mistella, cooked must and wine distillate.
AGING: One of the secrets of quality marsala is aging, which is why Oltre Cento ages in oak barrels of different capacity for at least 24 months
