Suolo Cabernet Franc is part, together with Suolo Sauvignon Blanc and Suolo Zibibbo, of the Suolo line of the Duca di Salaparuta winery. This line of wines was born from a project by the winemaker Barbara Tamburini and the agronomist of the cellar with the aim of telling the profound intimacy of man with the land of his vineyards. Suolo Cabernet Franc and the other two wines of the same line are born in precise portions of the vineyard particularly suited to the cultivation of the respective vines. The portion of the vineyard of the Suor Marchesa Estate dedicated to Cabernet Franc, called Suolo 7, is exposed to the South, where the warm rays of the sun illuminate the grapes and help them to ripen.

Grape variety: 100% Cabernet Franc

Production area: Tenuta Suor Marchesa in Riesi (CL) in central-eastern Sicily

Altitude: 300-350 meters above sea level

Soil: calcareous-clayey

Climate: mild winter with little rain; cool, breezy, dry spring; hot summer with some rainfall

Vine training system: Spurred cordon

Plants density: 5,500 vines/hectare

Harvest: Manual with small crates

Vinification: After the grapes are destemmed and pressed, alcoholic fermentation takes place in stainless steel tanks at controlled temperature (28°C). After racking, the wine obtained undergoes malolactic fermentation in the same tanks

Ageing: In French oak barriques for about 12 months. At least six months before release

Alcohol content: 14% vol

Colour: Deep ruby red with purple tinges

Bouquet: Fruity notes of blackberry, blueberry and raspberry jam, which blend with notes of liquorice, sandalwood, vanilla and noble spices

Flavour: Well structured and balanced. Excellent freshness. The tannins are ripe, smooth and velvety. Lingering aftertaste

Serving temperature: 17-18°C

Food Pairings: Perfect with strong flavors dishes based on red meat (mixed grill, leg of lamb) and game (pheasant breast). Also ideal during an aperitif to accompany a platter of mature cheeses such as Ragusano
