Passo Delle Mule Duca di Salaparuta
Enveloping, soft and fresh Nero d'Avola
A single varietal wine produced from Nero d’Avola grapes, first produced on the sinuous and well-ventilated hills of the Suor Marchesa estate, in the hinterland of the southern part of Sicily, where grapes reach full maturity under the late September sun.

Soil: Mixed limestone-siliceous composition
Altitude: From 290 to 340 meters above sea level
Climate: Mild winters with cool springs, hot and very dry summers and autumns
Plant density: 5,290 vines per hectare
Training system: Vineyard grown in the counter-espalier
Harvest: Manual, when perfectly ripe (after half of September)
Vinification: Destemming and traditional maceration for 8 days at 28-30°C
Maturation: Passo delle Mule was born from the meeting of Nero d’Avola that spends at least 10 months in very fine-grained oak wood and Nero d’Avola that is vinified & softened in vats
Aging: After bottling 6-8 months in the cellar at a controlled temperature (15-16°C) to evolve the bouquet
Alcohol content: 13.0% - 13.5% by vol.
Color: intense and deep ruby red
Aroma: enveloping, fruity cherry and raspberry, pleasantly balanced complex of spices and vanilla
Taste: rich, ample and velvety, with great structure and aromatic persistence, with typical austere but gentle tannins
Pairings: Excellent with red meat dishes and medium-aged cheeses
Serving temperature: 17-18°C
Storage: Bottle laid down in a cool (15°C) and not excessively humid environment
Duration: Over 5 years if stored in suitable cellars
First year of production: Harvest 2002
