Duca Nero Duca di Salaparuta
In the Vajasindi estate, on the slopes of Etna, Duca Nero is born, the Pinot Nero sparkling with the Charmat method. It is an elegant, fresh vintage sparkling wine with a marked minerality thanks to the volcanic origin of the terroir.

TERRITORY OF ORIGIN: Tenuta Vajasindi on the slopes of northern Etna, in the Municipality of Castiglione di Sicilia
SOIL: Volcanic, rich in microelements
ALTITUDE: Above 300 meters above sea level
VINEYARDS: 4.500 vines per hectare cultivated with counter-espalier
HARVEST: Manual at the end of August. The grapes are harvested at "early" ripeness with high acidity and medium sugar content
VINIFICATION: The wine, the result of a white processing of Pinot Noir worked at low temperatures, is sparkling in autoclave with the Charmat method
MATURATION: From the second fermentation it is rocked for more than six months in an autoclave on its lees
AGING: After bottling, it spends a month in the temperature-controlled cellar for the development of the bouquet
ALCOHOL CONTENT: 12.0% - 12.5% by vol
SUGAR CONTENT: Extra Brut
COLOR: Very pale straw yellow with clear greenish reflections
BOUQUET: With great elegance it tells of mineral notes, accompanied by a light crust of bread
TASTE: Wide with excellent freshness and minerality
SERVING TEMPERATURE: 6° - 8°C
GASTRONOMIC PAIRINGS: Excellent as an aperitif, splendid throughout the meal
STORAGE: In a cool and not excessively humid environment, away from light
DURATION: Up to five years if stored in suitable cellars
