ALTITUDE: Over 550 meters a.s.l.
VINEYARDS: Raised in espalier
HARVEST: Manual and morning towards the end of August, slightly anticipated in order to preserve the acidity.
VINIFICATION: Obtained from softly pressed whole grapes, using only the first fraction of must, 55% which is subsequently fermented at low temperature. The wine obtained is further processed in an autoclave with the long Charmat sparkling method.
MATURATION: After the second fermentation it remains for at least 6 months in
autoclave on its own yeasts.
AGING: At least three months in bottle at controlled temperature.
ALCOHOL CONTENT: 12.0% - 12.5% in vol.
SUGAR CONTENT: 9 g / lt.
SERVICE TEMPERATURE: 6 ° - 8 ° C.
COLOR: Straw yellow with clear greenish reflections
BOUQUET: Pleasant and complex in which it is possible to perceive fruity aromas evolved in balance with clear sensations of bread crust
TASTE: Fresh and lively, well balanced, with remarkable personality and pleasantness
PAIRING: Excellent aperitif but also pleasant throughout the meal.
STORAGE: In a cool and not excessively humid environment, away from light.
