The Risignolo estate, with its lands parched by the Sicilian sun, is home to Kados, a single varietal wine produced from Grillo grapes. An extraordinarily well-structured and full-bodied white wine with floral and citrus notes. Its full, velvety and lively flavour embodies all of the charm of this noble land.

1st YEAR OF PRODUCTION - Vintage year 2001.
PRODUCTION AREA - Western Sicily, town of Salemi.
SOIL - Mixed composition, mainly siliceous-calcareous.
ALTITUDE - More than 300 meters msl.
VINEYARDS Upward and bush-trained vineyards, with a density of more than 5,000 plants per hectare.
CLIMATE Mild winters with extremely dry springs and summers with sharp differences in temperature.
VINTAGE By hand, in the morning, at full maturity, during the first half of September.
VINIFICATION Further selection of the grapes during the harvesting to obtain approx. 55% of the first pressing must which is left to ferment slowly in small oak casks for about 40 days.
AGEING At the end of November the wine is poured with its lees in glasslined vats in cool cellars where the evolution continues until late spring.
MATURING For at least three months in bottle at controlled temperature.
TASTINGColour - pale yellow with slight greenish highlights. Aroma - floral, slight note of vanilla, complex.
Flavour - wide, velvety yet lively, well-bodied and persistent.
ALCOHOL CONTENT - 13.0 v %.
MEAN ANNUAL PRODUCTION - 55,000 750-ml. bottles.
SERVING TEMPERATURE - 10° - 11° C.
RECOMMENDED GLASS - Medium-wide transparent, tulip glass.
RECOMMENDED WITH - Typical Sicilian fish, shellfish and poultry dishes.
STORING - Reclined bottle in cool room (15° C.) away from light.
LIFE - More than 4 years if kept in cellars with suitable conditions.
