Kados Duca di Salaparuta
The Risignolo estate, with its lands parched by the Sicilian sun, is home to Kados, a single varietal wine produced from Grillo grapes. An extraordinarily well-structured and full-bodied white wine with floral and citrus notes. Its full, velvety and lively flavour embodies all of the charm of this noble land.

CLASSIFICATION: Sicilia DOC
TERRITORY OF ORIGIN: Western Sicily, between the municipalities of Salemi and Gibellina, Tenuta di Risignolo
SOIL: Mixed composition, mostly siliceous-clayey
ALTITUDE: Around 300 meters above sea level
VINEYARDS: Raised espalier and sapling with a density of over 5,000 plants per hectare
GRAPE HARVEST: Manual and morning, perfectly ripe, during the first fortnight of September
VINIFICATION: From the grapes, further selected during the harvest, about 55% of flower must is obtained which slowly ferments in small new oak barrels for about 40 days
MATURATION: Evolution on its lees until spring at controlled temperature
AGING: For at least three months in bottle at controlled temperature
ALCOHOL CONTENT: 12.5% - 13.0% in vol
SERVICE TEMPERATURE: 10-12°C
COLOR: Straw yellow with pale greenish reflections
BOUQUET: Floral, slightly vanilla and complex
TASTE: Wide, velvety, lively, with great structure and persistence
PAIRING: Accompanies good fish dishes, noble crustaceans and tasty white meats
STORAGE: In a cool and not excessively humid environment, away from light
DURATION: Over four years if stored in suitable cellars
