Cinniri is a goat's cheese obtained from the precious organic milk of the Girgentana goat, an endangered native Sicilian breed that has become a Slow Food Presidium. The peculiarity of Cinniri is its seasoning. In fact, it is seasoned under almond wood ash to protect it from mold and parasites. A soft and compact cheese, it is a fine goat's cheese with a sweet and unmistakable taste with notes of dried fruit and green walnuts. Nutritionally rich and easily digestible, Cenerino is also one of the ideal cheeses for those suffering from high cholesterol.
