What are the characteristics of Tonda Iblea Donnafugata?

The Tonda Iblea cultivar grows mainly in the south-eastern area of Sicily. This area enjoys good temperature variations and a generally mild climate. The diffusion of this type of tree is represented by the provinces of Messina, Catania and Syracuse, also recorded in the Trapani and Agrigento areas.

The harvest takes place at the beginning of the veraison of the olives, when the accumulation of polyphenolic substances is at its maximum, usually carried out in October. The plant is harvested manually using olive harvesters.

Milling immediately after harvesting, using a continuous cycle cold extraction system, which carries out the malaxing phase (mixing of the olive paste useful for separating the oil) in a controlled atmosphere, allowing the aromatic components to be best preserved. The oil produced is of particular value because it is characterized by very low acidity and a high content of polyphenols.
