Fish eggs are a valuable food for preparing delicious recipes. Despite being less valuable than caviar, tuna bottarga is a sought-after and refined ingredient, so much so that it is considered "Mediterranean caviar". Drago, a historic fish preserve company present in Syracuse since 1929, produces this bottarga according to the Sicilian tradition in a careful and scrupulous way. The tuna eggs are carefully extracted, washed, salted with sea salt and dried naturally. Once the correct drying has been achieved, the bottarga is floured and preserved with the addition of olive oil, without the use of preservatives and starches. Its intense flavor gives dishes that extra touch of flavour. A food appreciated not only because it is good but also because it is a source of proteins and Omega 3.
