Harvest: Third week of August

Vinification: After cryomaceration at a temperature of 5-8 ° C for 4/6 hours, ferment for 15/20 days at 16-18 ° C. The wine will mature in cement and steel tanks for a month. Aging in large barrels for 11 months.

Alcohol content: 13% vol

Tasting notes: Floral scents infused with slightly herbaceous notes, intense aromas of white peach and cedar; on the palate it has the right acidity which makes it pleasantly fresh and savory.

Pairings: excellent with vegetables and legume soups, baked fish with potatoes and pasta with tuna bottarga
