HARVEST: Manual, starting from mid-September, of overripe grapes on the vine
VINIFICATION: Use of the traditional press to create musts with a high color load and high marine flavour. Fermentations in concrete, punctuated by continuous micro-oxygenations which continue even after fermentation
FALLING IN LOVE: Meeting between wine, siphon, cooked must and a small percentage of alcohol
AGING: 4 years, in oak wood from the Florio cellars, in Sicily
ALCOHOL CONTENT: 18%
