PLANT DENSITY: 5,000 plants per hectare.
HARVEST PERIOD: 19th September.
VINIFICATION: The grapes, collected in the crate, were selected by hand and sent for destemming, without being crushed. After inoculation, they fermented in open tonneaux, around 22 ° C, with soft manual punching; 12 days of stay on the skins, followed by pressing in the basket press.
AGING: 6 months in 3rd passage tonneaux, then steel.

ALCOHOL CONTENT: 14% vol.
TOTAL ACIDITY: 4.90 g / l.
AGING CAPACITY: good potential, from 5 to 10 years.
ORGANOLEPTIC NOTES: Flint, ink, wild plums and cherries among the aromas of this very particular version of Pinot Noir. Velvety but reactive tannins in the mouth provide a lively red, but gentle and elegant at the same time. "Good vibrations".
PAIRING: quail and woodcock and other refined dishes based on game. Also perfect with a slice of fresh caciocavallo, or next to a cauliflower flan.
