VINIFICATION: the grapes, collected in crates, are immediately refrigerated at 10 ° C, then selected by hand. After destemming, they ferment at 25 ° C in steel tanks and remain on the skins for 21 days, with short pumping over. They are then gently drawn off with the vertical press; malolactic fermentation in steel follows. The resulting wine ages in oak barrels for 12 months.

ORGANOLEPTIC NOTES: This wine draws the gustatory strength and the extraordinary aromas of incense from officinal herbs, hibiscus and wild fennel from lava sands. Bright and lyrical wine, it recounts without filters the character and refinement of the great mountain reds but at latitudes close to Africa. Compact fabric tannins are elegantly extracted. The sweetness and generosity of berries and currants mixes with the aromas of incense and beeswax, a slight almost saline touch invites you to return to the glass.

PAIRING: A wine whose character can allow very daring combinations with similar dishes
character. Game, truffle dishes, rock fish also with complex sauces, cheeses and salami.
