TYPE OF SOIL: the soils have perfect exposure and position, black due to the lava sands, and therefore extraordinarily rich in minerals; around woods and more recent lava flows.
ALTITUDE: PIETRAMARINA 510 meters above sea level; SCIARANUOVA 850 meters above sea level; FEUDO DI MEZZO 605 m a.s.l.
YIELD PER HECTARE: PIETRAMARINA 80 quintals; SCIARANUOVA 70 quintals; FEUD OF HALF 50 quintals
TRAINING SYSTEM: PIETRAMARINA spurred cordon; SCIARANUOVA spurred cordon; FEUD OF HALF sapling.
PLANT DENSITY: PIETRAMARINA and SCIARANUOVA 5,000 plants per hectare; FEUD OF HALF 10,000 plants per hectare.
HARVEST PERIOD: PIETRAMARINA 10-15 October; SCIARANUOVA October 27; FEUD OF MIDDLE 25 October.
VINIFICATION: the grapes, harvested in the crate, are immediately refrigerated at 10 ° C, then selected by hand. After crushing and destemming, they ferment at 25 ° C in steel tanks and remain on the skins for 21 days, with short pumping over. They are then softly drawn off with the vertical press; malolactic fermentation in steel follows. The wine thus obtained is aged in oak barrels for 12 months.
AGING: in 25 hl and 36 hl oak barrels

ORGANOLEPTIC NOTES: This wine draws the gustatory strength and the extraordinary aromas of officinal herbs incense, hibiscus and wild fennel from lava sands. A bright and lyrical wine, it tells the character and refinement of the great mountain reds without filters but at latitudes close to Africa. The compact fabric tannins are elegantly extracted. The sweetness and generosity of wild berries and currants mixes with the scents of incense and beeswax, a slight, almost salty touch invites you to return to the glass.
PAIRING: A wine whose character can allow very bold combinations with dishes of the same character. Game, truffle dishes, rock fish also with complex sauces, cheeses and cold cuts.
