Detective stories. On the palate it is perfectly dry, with a not excessive acidity. The taste is perhaps its strong point in this youthful phase, with that “mineral” taste on which many experts compare in order to describe it.
PAIRING: Its vibrant acidity and pronounced sapidity goes well with all 'pure' tastes: mackerel and snapper, prepared in the oven or steamed, dishes based on rice and vegetables, raw vegetables and in ethnic cuisines with sashimi, or by changing continent with quesadillas.
