VINIFICATION: the grapes, harvested in the crate, are immediately refrigerated at 8 ° C; selected by hand and sent to a light crushing and destemming and soft pressing. The decanted must is decanted and inoculated with yeasts and ferments at 15 ° C, in stainless steel. The wine thus obtained remains on the fine lees until March with continuous agitation.

ORGANOLEPTIC NOTES: In this case, the very faint golden color does not portend the explosion of aromas of ripe fruit and the aromatic charge of white flowers that magically transport the taster to the slopes of the Etna mountains. Even on the palate the wine manages to combine softness and gustatory grit with a drinkability rich in a sincere fruitiness of lemon peel and green apple linked to an enthralling minerality that lengthens the finish.
