Sicily, thanks to the mildness of its climate and the fertility of its lands, is able to produce tomatoes throughout its territory and in every period of the year.
Preparation: First, soften the tomatoes slightly by dipping them in boiling water and draining them immediately, then let them dry well on a cloth for 12 hours so that they lose their humidity and are completely dry.
Let's proceed with the potting: we divide them into the jars with the garlic cloves and natural flavourings. We coat them with the oil and seal hermetically.
