Grappoli del Grillo was born from a brilliant intuition of Marco De Bartoli. In 1990 with the native Grillo grapes of the Marsala area used to produce until then only Marsala wine, De Bartoli decided to produce a dry white table wine. Thus was born the first table wine made from 100% Grillo grapes. This austere vine on the sandy soils of Contrada Samperi and thanks to the proximity of the sea gives a grillo wine with iodine and fruity notes, of great elegance and structure. Aged in French oak to preserve its aromas, Grappoli del Grillo evolves unexpectedly in the bottle, developing unrepeatable and always different aromas.

Vinification: after a careful and rigorous manual selection of the bunches, the grapes are subjected to soft pressing. The must obtained naturally decants cold for 48 hours
Fermentation: the clarified part starts fermentation, with indigenous yeasts at a controlled temperature, first in steel tanks and then in French oak barrels to preserve the primary aromas and enhance the bouquet during the refinement period
Ageing: 12 months in French oak barrels of various sizes in the presence of suspended yeasts (bâtonnage technique) until maturity. Refines well in the bottle
Analytical data of the wine: total acidity 7.32; residual sugars 1.4; Total SO2: 39 mg/l
Alcohol content: 13% vol
Color: intense yellow with greenish reflections
Nose: fruity and floral bouquet with aromas of pineapple, exotic fruit and wild flowers
Palate: fruity and elegant. The finish is slightly bitter and persistent
Pairings: excellent white wine to pair with characterful dishes. Perfect with grilled fish, tempura fish and risottos
Serving temperature: 10-12°C
Longevity: 5 years. Surprising to taste it after 10 years of aging in the bottle
