Abbazia Santa Anastasia sparkling wine, with a 100% Grecanico grape variety, which expresses the characteristics offered by the Sicilian land and the residence on the yeasts for 72 months. Produced according to the classic method and with a Brut dosage.
The soil in which the grapes are grown is medium clayey. The winemaking takes place with the soft pressing of the whole white grapes and the fermentation takes place at low temperature. After the harvest, the wine is pulled the following spring and refermented in the bottle at a controlled temperature of 17°. Subsequently, the wine is refined in contact with the yeasts for 72 months, placed on pupitres with manual riddling.
