NAME: CERASUOLO DI VITTORIA DOCG
GRAPES: Nero d’Avola and Frappato.
PRODUCTION AREA: south-eastern Sicily, in the territory of Acate.
TERRITORIES: altitude 120-150 meters s.l.m .; gently sloping land; soils tending to sandy interspersed with a substratum of calcareous tuffs and soils of medium texture, tending to clayey; pH 7,7, total limestone 21%.
VINEYARD: counter-espalier farming with spurred cordon pruning, leaving 6 to 10 buds per plant. Plant density 4,000-4,500 plants per hectare; yields of 70-80 quintals / ha.
VINTAGE 2017: in Acate (Vittoria), the 2017 vintage recorded 496 mm of rain which corresponds to the average figure * of the territory (495 mm); temperatures, on the other hand, were above average, in particular those between July and August. Thanks to emergency irrigation and careful management of the production load, healthy and perfectly ripe grapes were produced. The climatic trend of the year led to an advance of about 10 days in the maturations. Overall, there was a drop in production of around 10%. (* rainfall recovered by the Sicilian Agrometeorological Service, Acate station, since 2007.)
HARVEST: the Nero d’Avola harvest began on 30/8 and ended on 5/9, while that of the Frappato began on the 5th and ended on 7 September.
VINIFICATION: the fermentation is carried out in steel with maceration on the skins for about 10 days at a temperature of 25 ° - 28 ° C. Once the malolactic fermentation has taken place, it is aged for about 8 months in the tank and then in the bottle for at least 7 months.
ANALYTICAL DATA: alcohol 13.25% vol., Total acidity: 5.2 g / l., PH: 3.54.
TASTING NOTES: intense ruby color with bright violet reflections; it offers intense fruity aromas among which the notes of black cherry and plum stand out; the bouquet opens to delicate floral nuances and features spicy notes of black pepper. When tasted it is supported by freshness and softness that make it juicy and very pleasant to drink. The tannin is fine and well integrated. FOOD & WINE: perfect with a glass, it goes well with tasty first courses and grilled meat; to try with pulled pork and meat dumpling. Excellent at 15-16 ° C: an unusual red perfect also with sliced bluefin tuna, amberjack or important baked fish. Serve in large glasses.
LONGEVITY: 4-5 years.
