Grapes Nero d'Avola 50%, Merlot 50%.
Trained in the counter-espalier system and pruned in spurred cordon. Average planting density, 5,000 rootstocks per hectare (2,204 an acre), production of about 6.0 tons per hectare (2.67 tons an acre). Prevalently clayey terrain of medium consistency.
Vinification: The Merlot is harvested in the final decade of August, while the Nero d'Avola is picked in the first decade of September. The grapes are vinified in stainless steel with skin contact of about 12 days at a temperature of 26-30° C. (79-86° F.). When malolactic fermentation is entirely completed, the wine is placed in new and twice-used French-oak barriques for about 12 months and then fined for at least a further four months in the bottle.
Description: This wine with its extraordinary personality and elegance has great chromatic impact. The bouquet is full with upfront fruity notes. Outstanding among them are scents of sour cherries, blackberries and wild berries along with hints of cacao, licorice and cardamom. Persistent finish on nose and palate.
Food matches: This wine combines best with imposing dishes of roasted or braised red meats, game and cheeses.
Three dishes Coscio di cervo al forno (roasted leg of venison). Coscio di stambecco al forno con verza stufata al vini rosso (roasted mountain goat with stuffed cabbage in red-wine sauce). Piccione ripieno (stuffed pigeon).
Serve: If served in large, big-bellied goblets, it can be uncorked at the time it is to be seved; otherwise a couple of hours before serving. Excellent at 18° C. (64° F.).
