'a carciofina – Typical Sicilian preserve
Artichokes in oil, in dialect 'a carciofina, are one of the most used typical Sicilian preserves on the Sicilian table. Only the heart of the best Sicilian artichokes from Niscemi, a Slow Food presidium, processed fresh, seasoned with a few simple and genuine ingredients and preserved in sunflower seed oil.

The undisputed protagonist of aperitifs and tasty recipes, the dried tomato is one of the most classic pickles of the Sicilian gastronomic tradition. Only quality tomatoes with fleshy pulp, seasoned with garlic, basil and salt and preserved in oil, according to the traditional Sicilian recipe.

The capuliato was born when the methods of preserving tomato sauce and their cultivation in greenhouses were not yet practiced. The recipe has spread on a gastronomic level in many provinces and in nearby Gela.
