The Maria Costanza Rosso Riserva represents the culmination in the interpretation of the Sicilian grape par excellence, Nero d'Avola. The symbol of the label is the orchid (Paphiopedilum insigne) better known as "Venus Pantofola", favorite flower of Maria Costanza, ancestor of the family, also a wine grower and a great wine lover.

HARVEST PERIOD: mid-October
HARVEST METHOD: selection of the bunches on the plant and manual harvesting in boxes of 14 kg
VINIFICATION: the grapes are delicately shelled and, after further manual selection, are transferred to horizontal and vertical fermentation tanks where, after a 30-day maceration, the alcoholic fermentation is completed. Malolactic fermentation is carried out partly in oak barriques and partly in steel
MATURATION: about 24 months in oak barriques, complete with about one year in steel tanks. It was bottled in the autumn of 2016.
ALCOHOL: 14% vol
COLOR: deep dark red and almost impenetrable
NOSE: Clear hints of spice, green pepper and unroasted cocoa berry, followed by fresh red fruits such as blueberry and currant. On the final notes of light toasting that recall incense.
PALATE: full, intense and enveloping. The tannin is strong, rich and of excellent quality. Structure and freshness guarantee a remarkable persistence and drinkability.
PAIRING: perfect with vegetable preparations, roast meats, game, medium and long-aged cheeses
SERVING TEMPERATURE: about 17-18°C
POTENTIAL AGING: over 20 years
