Denomination: Contessa Entellina DOC Chardonnay Sicilia

Grapes: Chardonnay

Production zone: south-western Sicily, Tenuta di Contessa.

Altitude: from 200 to 600 m a.s.l.

Terrains: clay loam soils with a sub-alkaline reaction rich in nutritive elements 

Climate: Mild winters; dry and windy summers with strong temperature changes between day and night.

Vineyard: counter-espalier farming with spurred cordon pruning

Plant density: 4,500 - 6,000 plants/hectare

Yield: about 70-80 quintals/ha

Harvesting: the harvest of Chardonnay La Fuga, held in the first half of August, takes place at the first light of dawn

Vinification: the fermentation is carried out in steel at a temperature of 15-16°C

Aging: the wine is then aged in the vat on the Feccino Nobile for five months and at least three months in the bottle before being sold.

Alcoholic content: 13.5% vol.

Color: brilliant straw yellow

Nose: fresh bouquet with floral notes combined with hints of tropical fruit (pineapple) and golden apple

Palate: in the mouth it is sapid and fresh thanks to a pleasant acid vein.

Longevity: 4-5 years

Food & Wine: perfect with vegetable and seafood risottos. Also excellent with chicken with herbs, pies and fish main courses

Serving method and temperature: uncork at the moment and serve in slender and wide glasses at 10-12°C

First vintage: this wine was born with the Contessa Entellina DOC in 1994.
